Banana Chocolate Chip

Ingredients:

  • 2 & ¼ cup of all purpose flour
  • 1/3 cup of Nana Flakes
  • 1 cup of water
  • 2 TSP of vanilla extract
  • 1 cup of vegetable shortening at room temperature
  • ½ cup of packed light brown sugar
  • 1 cup of semisweet chocolate brown sugar chips
  • ½ TSP of baking powder
  • ½ TSP of baking soda
  • 1 TSP of salt
  • ½ cup of granulated sugar
  • 2 large eggs
  • 1 cup of coarsely chopped walnuts

Instructions:

  1. Sift together the flour, baking powder, baking soda, and salt. Set aside.
  2. Add Nana Flakes to water and mix until smooth, mix in vanilla extract. Set aside.
  3. At medium speed; beat the vegetable shortening and brown sugar at medium speed until light and fluffy, then blend in the Nana Flakes mixture.
  4. Add the eggs, one at a time, beating well after each addition.
  5. At low speed, blend in the flour mixture, stopping once or twice to scrape down the sides of the bowl with a rubber spatula.
  6. Mix in the chips and nuts.
  7. Spread the dough onto un-greased baking sheets leaving space between cookies for them to expand while baking. Bake until the cookies are golden brown, about 12 minutes, then remove to racks to cool.

I made the Nana Flakes Chocolate Chip cookies and they taste great. I used raw sugar for the granulated sugar and since I didn't have semisweek chocolate brown sugar chips (which I should have used) but I used semisweet chocolate squares for baking (I chopped up) and I didn't put walnuts, because I can't have nuts. But with these few adjustments, the cookies are GREAT!!!!!
